Quinoa patties from Hope for Healing
I rustled up some quinoa patties last night, with a few modifications. I had already made a sweet potato dip (baked sweet potato, touch of orange juice, dab of tahini, spices to suit, thrown in food processor), so I subbed in pumpkin and buttercup squash. I also used turmeric, coriander and ginger instead of curry powder. Very delicious (someone stopped by my office to rave about the smell!), but required twice the cooking time and still not quite as crisp as if I’d fried them after baking. Still, an exciting dish to last a few days!
