Pumpkin goop delight
I was recently gifted a Ninja food processor, and I am sad to report that its performance is worse than my $30 Black and Decker. Its canister has multiple grooves which catch a substantial amount of food, and the 4 blades do an awful job of really mixing ingredients. Plus the Black and Decker has a slicing/grating blade. The Ninja came with travel cups for smoothies, but I haven’t been as avid about smoothies lately as I’ve backed down on fruit consumption. I think I’ll reinstate a refurbished Vitamix (the holy grail of blenders/food processing) to my wish list.
That said, I used the unsatisfactory Ninja gadget to whip up (rather, goop up) a pumpkin dessert of sorts, largely inspired by another blogger.
3/4 cup pumpkin
1 tbsp unsweetened finely shredded coconut
1 almond milk ice cube
1 tbsp almond (or other nut) butter
dash of nutmeg, cinnamon, maple syrup, and vanilla extract
I then put the goop in the freezer for about 10-15 minutes to give it a frosty edge. 205 calories, and includes a vegetable!
